NGERINGA Cider 2021
Distinctly luscious, fruity aromas of candied apples and boiled lollies with subtle notes of ripe pear, quince and elderflower. On the palate, crunchy apples, slight phenolic grip and hints of complexity from fermentation in barrel. Pure, delicious, dry cider.
Orchard notes: The east facing "Summit Slope Orchard" faces the Mt Barker Summit adjacent to our Summit Vineyard. The orchard soil is sandy loam over clay and sandstone. The entire Ngeringa farm is certified biodynamic, farming with the rhythms of nature and working towards a self-sustaining farming system without the use of synthetic chemical inputs.
Cider Making: The apples, quinces and pears were pressed in one batch, co-fermented in 500L old French oak barrels and bottled at around 11g/L residual sugar. No enzymes, no added yeast, no filtration or fining.

For the first time in a few years we had reasonable winter rains going into spring of 2020 and also some good follow-up rains right into early summer. A significant difference to the two previous seasons was no late season frost, no hail and favourable weather in November/ December. A much milder than average summer with no severe heat spikes resulted in a perfect long ripening season.
