Uncultured Pétillant Naturel 2017

A breathtaking sunset in a bottle with aromas of summer pudding, cassis, blood oranges and crème fraîche. The palate is dominated by sweet red berries with moments of orange zest and fresh bread dough. There is an attractive, zesty, rounded rusticity to this wine that captures the essence of bare-footed summer bliss.

Pétillant Naturel (Pet Nat) is essentially farmhouse champagne - sparkling wine made in the méthode ancestrale without the addition of extra yeasts or sugars. Made from five varietals grown across both Ngeringa properties: Viognier from the sparkling micaceous soils of our Nairne Iluma Vinyeard; Pink Semillon and Chardonnay from the easterly-facing slopes of the Summit Vineyard; and Pinot Gris and Gewürztraminer from the small original home vineyard, Ollie’s block.

Almost a blend of every variety we grow (field blend ☺) – Pink Semillon, Gewürztraminer, Pinot Gris, Syrah, Pinot Noir, Chardonnay and Sangiovese – picked mostly in separate batches and blended prior to bottling (not a field blend!); short skin contact for the Pink Semillon; pressed to neutral French barrels.

Wild fermentation, no enzymes, gentle extraction, minimal temperature control. No fining. Estate bottled.

The abiding climatic feature of note at the start of the 2016/17 season was rain: the Adelaide Hills recorded its largest annual rainfall in a quarter of a century – meaning the largest our vineyards have ever seen. Notably, a third of that rain fell in July and September, saturating soils as the vines for the start of the growing season*. The result of this moisture, along with usually low temperatures, was late budburst and flowering. High levels of soil moisture and continuing rains through spring meant that our vines needed no further irrigation. Dense leaf canopies increased disease pressure for many in our region, but our biodynamically-managed vineyards remained healthy, vibrant and largely pest free, carrying a good crop to harvest. We began picking with our happy band of French and XXX vineyard hands about three weeks later than usual, but that long, slower-than-usual development created fine ripe tannins, good concentration and loads of flavour across all of our varieties. In sum, 2017 was a dream vintage in many respects: terrific quantity, excellent quality and an extended harvest.
