Tasting this unexpectantly, you'd think we were 'nutty'! You'd be partially right, but it's more that it is this Tuscan Vin Santo style wine which is extraordinarily nutty. Deliberately oxidative, this is an intriguing and delectable dessert wine. Aromas full of cashews, rich honeycomb, cedar and raisins. Rancio unmistakably. Cajoling flavours of honeycomb, rye bread and roasted nuts seduce, yet balanced acid leaves the palate cleansed and wanting for more. For the curious and adventurous!
WINEMAKING NOTES: Pink Semillon hand harvested from a certified organic vineyard in the Willunga Hills. Fruit was first dehydrated on racks for 4 weeks, then crushed and the juice put in to barrel. Traditionally at this point, the bung is cemented in, no topping is allowed and the wine is left for years to ferment and mature without topping. A wine of the saints!
