Pomegranate and cranberry aromas with the gentle spice of cedar and nutmeg. Rose petals and matchstick too.
On the palate, red currant and cherry fruits. Rosewood, savoury with a touch of spice. The herbal notes of our past Pinot Noir wines are not as apparent this vintage. The quickened ripening cut stem ripeness short so any whole bunch was virtually excluded from fermentation. The tannins are powdery, rolling persistently and with gentle length.
WINEMAKING NOTES
Berry sorted, wild ferment, 16 to 22 days on skins, hot ferments up to 34º C. 25% new French oak. First wine to be bottled on our own bottling machine! Bottled after 20 months. 12 months in bottle on release.
